Pahadi Aloo Gobi curry
Pahdi Aloo Gobi Jhool is famous and delicious Aloo Gobi curry. It is served with plain rice. My mom used to cook it very often. It is one of my favorite Pahadi curries.

2 cups cauliflower cut in small pieces (fool Gobi)
1 medium Potato(Aloo)
1 small onion chopped
1/2 cup plain curd
1/2 teaspoon Jakhya( is a pahadi spice used for tempering)
3 Tbs Besan/gram flour
1/4 cup cooking oil.
Pinch of Hing
1/2 teas spoon turmeric powder
1/2 teaspoon red chili powder/ 3 green chilies finely chopped
1/4 teaspoon home made Garam Masala
salt to taste
- In a small bowl mix Besan and curd into a smooth paste. next add 1 cup water little at a while and smooth it. keep this paste aside for later use.
- In a frying pan or kadhai heat 1/4 cup oil then add tempering of Hing and jakhkhya. Add onion fry for a minute. Add turmeric powder, gobi and aloo. Fry for 10 minutes on medium heat.
- Add all the spices chili, turmeric powder, coriander powder and garam masala powder. Fry for 2 minutes. Add above prepared Besan and curd mixture fry for 30 seconds now add 4 cups water little at a while. Cook for 10 -15 minutes switching between medium to low heat.
- Remove from the heat and sprinkle chopped green coriander leafs.
Mouthwatering Pahadi Gabi aloo curry is ready to serve with plain rice.
